Don’t miss Plascencia’s superb borrego de Rancho Cortes ala caja China, young lamb cooked whole in a China box. Seasoned and served with serrano chilies, potato and a sprig of rosemary, the tender meat practically falls off the bone into a waiting handmade corn tortilla. The large wine storage barrels on the perimeter of the property provide a great spot in which to enjoy a glass of Baja wine and watch the sun set over the Valle.
